Sunday morning breakfast is often time for a treat in our house. Think whipped cream and chocolate on just about anything. 😂

This morning, my daughter and assistant wanted to make s’mores pancakes. We even took the lazy way and used Bisquick, so these were super quick. Don’t get me wrong – I love to try fancy, intricate recipes! But sometimes I go for the slacker-version, and my little helper has just as much fun. 😁
This is a perfect recipe to involve your kids in, because it is simple and delicious. Plus, I love that I can sneak in little math lessons without them even realizing it. 😊

Step 1: Measure your ingredients as stated on the back of the Bisquick box. (Sometimes we do gluten-free, and the Pamela’s Pancake Mix works just as well). We also substitute Almond Milk (a favorite is Kirkland’s Unsweetened Vanilla) because each of us can only tolerate a tiny amount of dairy – which will come in the form of whipped cream this morning. 😋
Make sure not to overmix your pancake batter or your pancakes will come out tough and dense rather than light and fluffy. Leaving the batter a little lumpy is just fine.

Step 2: Prepare your homemade whipped cream – this is so easy. Pour a little cream (maybe 1/2 C) in a bowl with a splash of vanilla and beat on high with your hand-mixer until it is starting to form soft peaks. Toss in a couple spoonfuls of powdered sugar and beat on high another minute or so, until stiff peaks form. Set aside while you cook your pancakes.

I like to use an electric griddle to cook pancakes and French toast because I can cook more at once, plus I don’t end up with curled edges from my frying pan. You know they’re ready to flip when the edges seem dry and the air bubbles start to burst.

Once the pancakes are done, your littles can have fun customizing their own with a dollop of whipped cream, chocolate chips, and mini marshmallows. Who said you can’t have dessert for breakfast?! 😊
